Father's Day 2013-Stuffed Reese's Cupcake Recipe

For Father's Day I felt the need to create something in the form of food. I feel like that's all I ever give my dad is FOOD. Anybody else feel the same? I mean every once in a while we'll get him new shoes or clothes, but the main present is always FOOD. This goes for Christmas and birthdays as well. I will have to admit though, we got my dad some pretty cool presents for Christmas this last year. Like a Dremel tool he wanted, a cool wireless light for working on cars, etc. and Spence of course got him a knife. Sooooo there are those times where we find some pretty sweet things for our dads, but when in doubt, just make them something tasty! ; )

Stuffed Reese's Cupcakes:

I used this recipe for the chocolate cake part:

  • 1 Devil's Food Cake Mix
  • 1 box (5.9 oz) chocolate pudding
  • 1 C Sour cream
  • 1 C oil
  • 4 eggs
  • 1/2 C water
  • 2 teaspoons vanilla
Preheat oven to 350 degrees. Combine all of the ingredients with a mixer. Scoop into cupcake liners. (I filled them up slightly first, put the Reese's in and then but more batter over the Reese's.)

Bake for about 18 minutes or until they are just barely done. I like my cupcakes very moist in the middle.

Peanut Butter Ridiculousness (Icing):
  • 1 cup butter, softened
  • 1 cup creamy peanut butter
  • 4 cups powdered sugar
  • 5 teaspoons milk
I think I used at least twice as much milk that the recipe calls for because I didn't want my icing to be so thick.

I melted a bunch of chocolate chips with a little bit of margarine and put them in my chocolate drizzling plastic container. You could probably just use a Ziploc bag and cut a little hole in the corner if you want to. Then I drizzled a little bit of chocolate on top of each cupcake before I topped it off with a mini Reese's.

These were probably the best cupcakes I've ever made. That icing is to die for!! I don't usually ever eat the cupcakes I make until days after I've made them because they usually aren't as appetizing after I've been making them for a couple of hours. But I DID try one of these the day I made it!! They are pretty rich so you probably want to share them with someone!

I made a few extra-large cupcakes for our Dads.

Dad opening his presents: (Spencer's Dad opened his presents beforehand, I forgot to take pics then)

 I love my Dad!!

Happy Father's Day to our Dad's! I'm so grateful every day for these wonderful men in my life. Such great example of self-less service and hard work. We are so blessed. Thanks for all that you do! We love you.

I forgot to share the Father's Day craft we did with our kids in Nursery. Spencer and I prepped these ties the night before.

 My tester tie:

They actually turned out SUPER cute! It was fun to see the kids excited to give them to their dads. We had some pictures of the kids wearing their ties for their dad's on Spencer's phone but all the pictures on his phone got lost in a different file so we're still trying to figure out how to get the pictures back. Hopefully it's possible! Anyway, that was our cute Father's Day craft. It was pretty successful because we had a few extra helpers in there who were able to help the kids paint dots and glue buttons on. We did have one little girl going around picking the glued down buttons off of ties and putting them in her mouth. It was fun to watch her spit dozens of slimy/glued buttons out of her mouth into our hands! Good times in nursery! LOL
