April

Towards the beginning of April was Easter. It was so fun to be able to have the whole family here!!


Amy and Jaxon came in to town a few days before Easter. We were all able to go visit Grandma Kunkel.


This is after church on Easter Sunday. (Em didn't come in town until later that day.)



He's a happy little guy!!

After church we went to the airport to pick up Em and then had lunch at my parent's house along with other family and friends.



Beat boxing to make Jaxon smile. He loves it! Sometimes we have our own dance sessions!




Here are some cookie and cream sandwiches I made for Easter. They were super easy!!





Easter Cake Mix Cookies with Cheesecake Filling
  • 1 box of yellow cake mix
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/2 cup oil
  • 1 cup Easter M&M's
  • 1 tub of Cool Whip
  • 1 small package of cheesecake pudding mix (I used sugar free)
1.) Make the cake mix cookies-

M&M Cakies
  • 1 box of yellow cake mix 
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 bag M&M's (I chose the Easter themed ones.)
1) Mix together all the ingredients except the M&M's until completely blended and smooth. This took me a little while since the consistency is a little thicker than your normal cake batter.
2.) Stir in M&Ms.
3.)Ball up batter and put on a cookie tray. Bake at 350 degrees for about 9 minutes.
4.) Let the cookies cool completely before putting any filling on them. 
5.) While the cookies are cooling, you can make the cheesecake pudding mix. Stir the cheesecake pudding mix into the tub of Cool Whip and mix completely. 
7.) Spread a generous amount of the Cool Whip filling in between two cookies and sandwich them together. Enjoy!


The day after Easter the whole family went to Austin for the day. Of course, we made a very essential stop on our way there!




We also stopped and took some pictures in the bluebonnets.

So cute with Grandma and Grandpa!! It was their 30th anniversary that day too!!





When we finally made our way to Austin our first stop was for lunch at Torchy's. I'm pretty sure the only thing we did on our trip was eat!! HA!


Then the Big Top Candy Shop on South Congress! We had never been, which is crazy since we've been to Austin so much the last year! It was really fun! I loved the old school feel of the store!









Jaxon loved it too!!



Later we met with my brother after his class and went to the Institute building and walked around UT campus. We went to a few stores near campus and watched the turtles at the turtle pond for a while. 




And of course we had to stop at Gourdough's where we all split a doughnut. 





It was such a fun day trip! Not all families can stand to be with each other all day long. My family rocks!! ; )
