A Christmas Carol

Towards the end of November Spencer and I had a date night to the Alley Theater. We got to see A Christmas Carol. Is was really good! AND we had awesome seats!!

Dinner at Birraporetti's


We had so much fun this night! I ended up getting the hiccups before our food came. Let me just say that I have the worst hiccups EVER! They are deadly-take your breath away hiccups! Just horrible! And usually when I get the hiccups once, I have them randomly off and on that whole day. I would laugh and hiccup which caused us to laugh even more and hiccup again! (We were in a little corner of the restaurant where it echoed.) It was a never ending cycle and by the end we were just crying we were laughing so hard. We were a mess. At one point I think I recall Spencer sprawled out over his side of the booth just crying! I swear the people sitting next to us thought we were drunk...lol

Peanut butter castle

The beginning of November was my Dad's birthday, so of course a Reeses cake was in order.


We had dinner at Hickory Hollow and cake afterwards, except for by the time dinner is over who wants to eat another bite of anything?!?! 




For the cake you can just use a box of devil's food cake mix, or dark chocolate, or milk chocolate. It just depends on your preference. 

THE Peanut Butter deliciousness(one batch)
1 cup of powdered sugar
1 cup of creamy peanut butter
5 tablespoons of unsalted butter (room temperature)
3/4 teaspoon of vanilla extract
1/3 teaspoon of salt
1/3 cup of whipping cream

Mix powered sugar, peanut butter, unsalted butter, vanilla extract, and salt. Mix it on low until it is smooth (probably a good 2 minutes or so). Once texture is creamy and has an even consistency add the whipping cream and beat until light a fluffy. 




Of course the day wouldn't be complete without a selfie of my dad and his birthday cake. I seriously love this picture! Spencer SOMEHOW got a picture of it while my Dad tried to take a selfie with his cake. So funny! I have the BEST Dad!!

Halloween 2013

Bloodshot peanut butter ball eyeballs


I love this EASY recipe! 

Ingredients:
1 1/2 cups of peanut butter
1/2 cup of butter softened
1 teaspoon vanilla extract
3 3/4 cups of powdered sugar
White chocolate candy coating
Milk chocolate M&Ms
Decorating gel

Instructions:
1. Cream peanut butter and butter until it's light and fluffy. Beat in vanilla. Gradually beat in powdered sugar. Shape into 1 inch balls. Cover and refrigerate for at least 30 minutes.
2. In a microwave safe bowl melt the white chocolate candy coating. Dip peanut butter balls in white chocolate and coat completely. Then place on wax paper and add your M&M. 
3. Once the white chocolate coating had hardened I added the decorating gel.

Our new way of lighting pumpkins--works SOOOO much better than a candle! 




We bought 2 pumpkins about a week or so before Halloween because we knew we were going to carve pumpkins. Then about 2 days before Halloween I remembered and I needed to get another pumpkin for a turkey decoration that I use at Thanksgiving. It's ALWAYS an ordeal to get a pumpkin for my turkey decor. USUALLY it's because I wait to get a pumpkin until it's too late and all the pumpkins are gone! So of course, like every year we went out on the hunt for another pumpkin. We searched high and low-a bunch of grocery stores, Walgreens and Walmart. FINALLY at our last stop (which was WALMART) we found 3 big boxes of the reject pumpkins. Actually, I found a few good ones in there and we snatched those right up! We were so excited that we had finally found pumpkins that we might have gone a little overboard on the pumpkin buying. Can you blame us though? They were only $2 a piece! So for the rest of Halloween and all through November, we had our own little pumpkin patch. I actually took a pumpkin over to my parent's house (for my mom to make a pumpkin pie with) and the pumpkin actually lasted through most of December!!
