WOW...I'm SO behind! Sooo much has happened in the last month or so! On March 31st the family spent the day with Grandma Kunkel for her birthday. She wanted to go out to Freeport for lunch and to hang out on the beach. She hadn't been down there since the bad hurricane a few years ago. We wanted to look for the beach house we would spend our summers in. We drove past it about 3 or 4 times and didn't recognize it. The only way we actually confirmed that it was our beach house was by the address. It's crazy how much I actually remember about the summers we spent there at that house. So many good memories. I hope we can create memories like that for our children. 

Here are some pictures from the day! I got 2 lenses just a couple of days before so I got to play around with them. My favorite lens is my fish eye/wide angle lens!! I didn't spend much money on it because I figured it would be super cheesy and not very realistic. I seriously fell in love with it on our beach trip! Eventually I'll spend money on a nicer one. 

It was the PERFECT day! In the 70s, mostly sunny, and breezy. 







Unfortunately, Spence wasn't able to spend the day with us. Gotta love school!

Then we went back to her house and had a sugar free cake I made to celebrate her birthday. I just used a sugar free cake mix and found a sugar free icing recipe online. 




Ingredients

  • 1 (1.4 ounce) package sugar-free instant pudding mix
  • 1 3/4 cups milk
  • 1 (8 ounce) package cream cheese
  • 1 (8 ounce) container lite frozen whipped topping, thawed

  • In a medium bowl, combine pudding mix and milk. Mix well and let stand until thickened.In a large bowl, beat cream cheese until smooth. Add pudding and mix well. Finally, fold in whipped topping.

The icing was actually really good! I would rather just eat it with a spoon by itself though. If you want to thicken it up a bit so it doesn't melt off the cake you can use a little more pudding mix. Then I topped the cake with sugar free heath candy. YUMMY. ALL sugar free! :)
